Japanese Wagyu is globally recognized for its unparalleled marbling, tenderness, and depth of flavor and its grading system reflects that focus. All Japanese Wagyu is graded by the Japan Meat Grading Association (JMGA) based on the Beef Marbling Score (BMS), which ranges from 1 to 12, with 8–12 considered the highest tier of quality. The higher the score, the more intricate and abundant the marbling, those fine, creamy white streaks of intramuscular fat that give Wagyu its melt-in-your-mouth texture and luxurious richness.
