Italian Black Summer Truffles are found from May to September. They are black on the outside with more pronounced ridges and a light colored center (gleba), cream or gray to light brown in color. Elegantly light both in aroma and flavor. The Black Summer Truffles develop as the season progresses. While they're found to be delightfully mild in May, with gentle notes of hazelnut, they begin to deepen to an intense, earthy aroma by midsummer.
